umm.. I'd say pure hydrogen fluoride gas(100% hydrofluoric acid) under pressure works excellent. It might corrode into their bones, but if they're threatening you with a blade or physically attacked you, it sucks to be them.

 
Get a product called freeze +P...........its basically a combo of mace and pepper spray. I have used it several times (when I was a corrections officer) and it is very effective.
 
My old security job was so boring that I'd go out at night and try to get rabbits with the pepper spray - wasted a whole 4oz container of that crap "hunting" - never had one confirmed hit, and never had to use it on anybody. Never had to pull my gun either.
