Peach Desserts

Would like to request suggestions from OT on such.

Property we bought last year has a peach tree that has fruit that is ripening with about a diameter of 3-4 inches - slightly less than what you get at the store.

I am planning on collecting 3 lbs worth for a cobbler this coming weekend.
Right now, I am slicing, chilling and having them on cereal and ice cream.

Knowing what the tree is, means next year, I will fertilize, spray and prune it to enhance the fruit size and keep the bugs from getting 2/3 the crop.
I am picking up about 1lb or ruined fruit from the ground every day or so.

Peach Melba? Not as good as peach pie or cobbler, but at least it's different. The thing with peaches is that they're best when kept as simple as possible. The fancier you try to get the worse they'll taste.

Cut one peach into 1/8ths. Heat a bit of butter, the real shit (cultured) if you have it, in a non-stick pan. Once it starts to brown a little, add some brown sugar. Melt, and add the peaches. Raise the heat a little bit, but don't burn anything. Once the peaches sear a little on one side, flip them and let it go a little bit longer. The butter/sugar should be bubbling a bit, but not burning. When the peaches are seared and tender, put it in a bowl and serve with whipped cream or vanilla ice cream.

Delicious.

if they're plenty ripe already you can skip the whole cooking thing and just serve cut up peaches with heavy cream.

Those are massive peaches if they reach 4" in diameter. I have a peach tree and the peaches that I get are 2.75"~3.5". General rule of thumb for fruit tree is a cup of fertilizer per inch diameter of the tree trunk every six months (once in the fall and once in the spring), and bury the fertilizer a few feet from the trunk.

You can, but I'd still make up that butter/brown sugar caramel and pour it on the peaches.

I'm hardly an expert...but peaches are my favorite tree fruit. I'm fortunate as hell to be married to a baker who makes a great peach cobbler.
I also like peach pie...but not as well as I like cobbler.

We also make peach jam, peach tarts, (similar in flavor and texture to a pie) I like peaches sliced on my cereal, and I absolutely love them just sliced and eaten off the tree.

(did I mention I like peaches?)

BTW, what variety of peach tree, OP?

I have a small Elberta freestone in my yard. Only got 3 peaches this year. (planted in in March) but I'm hoping for a bit larger crop next year.

Anyway, like I was sayin', shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, shrimp-kabobs, shrimp creole, shrimp gumbo. Pan fried, deep fried, stir-fried. There's pineapple shrimp, lemon shrimp, coconut shrimp, pepper shrimp, shrimp soup, shrimp stew, shrimp salad, shrimp and potatoes, shrimp burger, shrimp sandwich. That- that's about it.
