For spaghetti gauge 9, I like to boil it for 3 mins. The outside is chewy and the core is HARD iiiiiiight. What's your preference?

Some folks like soba noodles and they are just this side of being mush. Italian pasta, for me, is al dente (italian as "to the tooth") where the outer half has texture and plumpness and the inner half is firm but not crunchy. Salting the water more than what folks normally suggest is a good way of cooking it to this style.

Well what is 'normal' consistancy? Consistant pasta sucks!

A la guitarra is where it's at. It's like biting into wire.

I like to cook it a little bit less than all the way through. I forget, is that al dente?

I like it a little "tough" as well.

I like it to have a tangible hardness to it when I bit into it, but not a crunch

15 minutes for spaghetti, 20 minutes for macaroni.

I still test it to make sure it is to my liking.

15, 20 minutes......! Wow. That's like Chef Boyardee limp. That's not pasta, that's liquid.
