So I want to make risotto, and I have shredded parmesan on hand. What happens if I substitute it for grated parm? What could I do with the grated parm I have?
 
OMG! Just don't stir it counter-clockwize!
Quality is the key whether it is grated or shredded. Course, if we're talking about cheese that comes grated or shredded from the store, quality is non-existent and should only be used as kitty treats.
