Why is it that most places put mozzarella on these as their main cheese? I just had a meatball parm sub from a legit Italian place, and they almost unexpectedly threw a heaping helping of real parmesan cheese on it.

This a great sub, more places should do this. The End.

You have it spelled wrong.

The dish is Parmigian.
The cheese is Parmesan.
The two concepts are unrelated.

Though parmigiana means literally "from Parma" (a city in Italy), the name derives from parmiggiana, a Sicilian recipe made with fried egg-plant, tomato sauce and mozzarella.

I just ask for a Chicken Parm.


Anyway, I wish more places would offer pepperjack cheese, it's my favorite.
