This thread is now about cake.

I got a new cookbook the other day. Julia Child's The Way to Cook. Holy shit there is this awesome cake I just have to make in it. You take a 9 inch round cake and cut it into three layers. You then make an apricot filling and syrup to put between the layers and you top the whole thing off with a mountain of snow white meringue frosting and apricot halves.

Looks great. I'm a fan of the classic Carrot Cake. This is one of the better ones:

This carrot cake is an exceedingly good cake made all the more pleasing by the twist of lime mascarpone icing. It’s delicious, it works and it’s better than any other carrot cake I’ve tried. I would normally bake this in a square or round cake pan, but for the picture I used a lovely old loaf pan and it came out looking gorgeous.

Preheat the oven to 350°F. Grease and line a 9-inch square cake pan or a round equivalent with wax paper. Beat the butter and sugar together by hand or in a food processor until pale and fluffy. Beat in the egg yolks one by one, and add the orange zest and juice. Stir in the sifted flour and baking powder, and add the ground almonds, walnuts, spices and grated carrot and mix together well.

In a separate bowl, whisk the egg whites with a pinch of salt until stiff, then gently fold them into the cake mix. Scoop the batter into the prepared cake and cook in the preheated oven for about 50 minutes until golden and risen. You can check to see if the cake is cooked by poking a toothpick into it. Remove it after 5 seconds and if it comes out clean the cake is cooked; if slightly sticky, it needs a bit longer, so put it back in the oven. Leave the cake to cool in the pan for 10 minutes, then turn it out on to a rack and rest for at least an hour.

Mix all the icing ingredients together and spread generously over the top of the cake. Finish off with a sprinkling of chopped walnuts.

• 11⁄4 cups unsalted butter, softened

• 2 cups light brown soft sugar

• 5 large free-range or organic eggs,
separated

• zest and juice of 1 orange

• 11⁄2 cups self-raising flour, sifted
1 slightly heaped teaspoon baking
powder

• 1 cup ground almonds

• 4oz shelled walnuts, chopped, plus
a handful for serving

1 heaped teaspoon ground
cinnamon

• a pinch of ground cloves

• a pinch of ground nutmeg

• 1⁄2 teaspoon ground ginger 10oz carrots, peeled and coarsely grated

sea salt

• for the lime mascarpone icing

• 4oz mascarpone cheese

• 8oz full-fat cream cheese

• 1 scant cup powdered sugar, sifted zest and juice of 2 limes

On the proposed topic of cakes, I'm planning on making a nifty white cake with strawberry filling this weekend. It ought to be nice... or rather I hope it will be! :)

Strawberry cheesecake is my favorite. and damn i love grahm cracker crust. i could eat a plate of just that.

Yeah, in another thread he was told how he fucked-up on filling out his financial aid forms and couldn't get a work-study job on campus. Yet, he has the nerve to give shit to someone else in this thread about not filing for financial aid.

Seriously, I can't think of a more useless individual than Trident. He's poor but can afford an iphone, car, gaming desktop, DSLR and now is bitching about not having a laptop for gaming and lightroom, not that he needs a laptop for school.

But in the end, he'll fail out of school and work at Ross for the rest of his pathetic life while telling anyone that gives him advice that they're wrong and he's right.
Wow. Way to be a liar. I've never fucked up any forms. My parents filled out all their tax information for the fafsa. So you all can go fuck yourselves.

I made brownies the other day. Time seems to go by WAY too fast latetly for some reason, I did not realize but "the other day" seems to have been like 2 weeks ago.

Brownies go bad, and it happens overnight. Learned that the hard way today. o_O

So moral of story is, when there are brownies, eat a lot of them so they don't go bad. :biggrin:

Hey Infinity, I could not resist the temptation. The cake mix is in the over right now and this is my first time baking a cake.. so wish me luck. The smell of cinnamon coming out from the oven is fucking amazing. Thanks for sharing the recipe.

first few cakes i did sucked. now though i am pretty good. my cookies are really good too.

last 2 pies i have done sucked.

I want to try making home made doughnuts sometime.

Let me know how it goes. Hope you do the lime on the topping, it really rocks!

I do not have an oven temperature.. so I slightly over baked it. The edges came out a bit crispy.. and yes I did that lime topping and it truly added an extra zing to it. Am enjoying the cake right now.

I ate the top half of the topping LOL.
