Sorry but true. Pancetta is cured not smoked so no smokey flavor. Round slices fit better on a roll with eggs. This bacon lover is converted.

While I love pancetta and know that it has its places in certain dishes (such as some Italian recipes) where bacon would be inappropriate, I still appreciate bacon as a breakfast item, or in certain recipes (bacon wrapped scallops, or bacon in fried rice).

You could soak it before using it. Too much salt in bacon too.
