P4 OC - Memory Timings vs Memory Speed

I'm to figure out what the best plan of attack is for this. Running a 3.0 prescott at 3.75 right now with OCZ PC3500 EB @ 200 MHz with the 5:4 barrier. I'm thinking about getting some PC4000 to run at 1:1. The only problem of course is that the latency of the faster ram is slower. I'm running the memory at 2.5-3-2-8 now (could probably tighten those up a little, haven't tried yet). Would I benefit from using some low latency PC3200, higher latency PC4000 or just continue using the PC3500 clocked down PC3000? I tried overclocking 1:1 with the OCZ EB but it didn't go too well. Just to let you know, I'm using an Asus P4C800-E Deluxe.

Thanks. I'm going to be doing some encoding and some gaming so I guess I'll go with the low latency over the other.
