you can't fleece sheep though; fleece is the result of the activity, which is called sheering. Also, There is no recognized analogue for the "sheering" description to mean "taking advantage of the disadvantaged," as there is for "milking" (and yes, you very well can milk sheep and it is very common; where would the world be without lovely pecorino fresco!?)
milking is "the action upon the animal," so it's the proper verb.
