Overnight at an airport

If a flight involves an overnight night stay in a foreign country (in my case 21 hours in Shanghai between flights), do I have to stay at the airport or can I leave to sleep in a hotel and do touristy things for a day?

I'm pretty sure you get a 3 day temp visa if travelling to a 3rd country while in transit, there are a couple of hotels close/at the airport, i'd book one of those and also see if there are any day trips that you can take from there. I might be headed through that airport later this year as well, China Eastern has had some amazing deals lately.

This policy allows transit passengers with passport of 51 countries to stay for up to 72 hours without a visa on direct transit.

The "23 hour Layover" is something many travelers intentionally try to do, (depending on the country, visa restrictions, etc.) in order to extend vacation time for little or no extra airfare.

Anything under 24 hrs. qualifies as a layover.

New York Times has a lot of "36 hours in xxxx" worth perusing.

"The Layover" with Anthony Bourdain was more or less about this form of blitz-travel.
