If you go through your manual, you will find most of what you need. Such as changing settings to optimal to open up other settings...etc.. I'd also recommend browsing here,
Nforcerhq.com -asus forum. as it is a very informative board. The act of changing too many settings at once has proven to be a hinderance for some, like myself, I need to power off and restore my settings on startup when going for too many. Here's a checklist before you start overclocking:
Run memtest at every new memory speed and setting to ensure stability.
Check your mobo battery to be at 2.8v or higher. If it's not, replace it. I beleive sandra can tell you battery readings, not 100% sure.
If using multiple sticks of ram, try each individual stick and note high/low settings that work, because when in dual-channel and o/c'ing, all mem runs to specs of the weakest.
I'd flash to bios 1002.A or 1002.a "uber", as these offer the best stability.

P.S. I wouldn't bank on being able to run 200fsb, it's been hit or miss, but seemingly miss for most.
