Overclocking 2500K w/ Gigabyte P67A-UD4-B3

I'm currently running Prime95 on my machine with all turbo levels set to 4.7Ghz. Vcore is at 1.42v. I enabled LLC and disabled C1E. Pretty much everything else is default.

Why is CPU-z showing my Vcore at ~1.056v during idle AND load?

That's normal for Gigabyte boards. Go with the HWMonitor "CPU" reading...it's accurate. Alternatively you can use the monitoring utility within Gigabyte EasyTune 6 but it will give you the same readings as HWmonitor

well if you're stable i don't see why its not ok. i would suggest lowering the vcore a bit. i can get 4.5ghz at 1.305 vcore.

What version CPUZ? P67 boards are notorious for screwed up software voltage readings.

You need CPUz 1.57.1 to get the correct voltage reading. You can find it here (along with several other useful utilities).

And I don't trust HWMonitor. The last time I tried it, the readings were way out of whack. This is a screen shot from a few months ago:

As far as I know it has not been updated since Dec 2010 (v1.17.1 - part of CPUID SB review kit).
