At work we are running an Outlook mail server, is there any way that I can restrict who and who cannot edit the calendars. We would like just a few people to have access to do so.
 
Assuming that your acct has Administrator privileges, you should be able to right-click on the Calendar from your own Outlook client and go to Sharing or Permissions (been a while, can't remember my terminology) to control which Exchange accounts have permission to read/add/edit the Calendar.

Any Exchange admin guide should be able to give you more info.
