is there something about having a PhD that lets you not respond to emails at all, or respond to them months after they were sent?

FUCK professors.

All of my professors reply to my e-mails by the end of the night.

Except for my Calc teacher, but that man should go DIAF anyway.
 
In case you haven't figured it out by now, MOST professors don't like using email.

Weird.. All of my professors prefer email to anything else. Instead of telling us what the homework is; they email it to us..

I should amend that to using it solely to send out homework and receive homework. If you want a discussion, clarification or, reconsideration of work done, you go to office hours period.

Most of my professors arent in their office ever, especially during office hours. I have 2 options..

1-Email them the question and they promptly respond (less than 2 hrs)
2- Go to one of the tutor labs and find somebody to help

I think you should be happy that your school is apparently above the norm. Having worked/attended multiple universities, professors tend to use email like a buffer zone to keep demands for their attention at bay.
 
So, some back story, I emailed a professor i had last year at a different university (1000 miles away from where I am now...) to ask if you could write me some letters of recommendation. he responded the next day saying he'd be happy to. I responded the next day giving him all the information he needed to write the letters.

then i hear nothing from him for a couple weeks. it was ok, since I emailed him over a month in advance of when my applications are due. i decided to email him again and ask if he received everything, etc. then, after another week or so, I emailed him again and asked if he was still planning on writing me recommendations. still no response.

So now, with about a week and a half till the due date, i build up the courage to call his office... and he says that he's been too busy. great. so much for my applications, then, huh?
