I get about a 5C change in temp from running the Small FFTs stress CPU and running Blend.

Just hte CPU brings my temps about 5C higher than the Blend... Which test should I use more for testing purposes?
 
Blend. It also stresses RAM. When blend hits SmallFFTs, the temps jump higher than when it's stressing RAM. The temps start out lower because it starts in LargeFFTs.
 
PCTC2 is correct. SmallFFT will push the CPU temp to the highest (almost as high as TAT), and LargeFFT (my favorite) will stress CPU-Chipset-Memory. Blend is probably the most close to real life usage in that it randomly (?) pushes CPU and memory back and forth. I prefer LargeFFT because sometimes Blend tend to make the system unusable (draggy) due to its high memory usage. And I think (with no scientific proof 😉 ) LargeFFT constantly pushes memory controller (chipset) which is often the culprit with NV chipsets - it heats up the SPP (NB) like nothing else.
