The head doesn't just INSTANTLY detatch. The heart can keep beating when the brain no longer functions, too. What function do you think pace makers do in their replacement of a non-functioning part? Anyway, the back of the neck isn't easy to cut through unless you're hacking fairly hard. In either case, there's going to be a very big mess.
