Just curious, when would someone need 16 ports?

Anyone who wires their house?

I have 14 ports in my house. They aren't all used simultaneously but there's devices plugged into a bunch of them. It's nice to know there's an available port in most rooms if I want to get something new, or need/want to move something that needs a port.

Why go through the pain of stringing wires around your house and NOT make sure you have all the wires you'll need in the foreseeable future.

Yep.
PS3 has one.
Xbox has one.
Wii has one.
Receiver has one.
Desktop has one.
NAS has one.
Media extender on one TV has one.
Netflix enabled TV has one.
Soon to be Netflix TV 2 will have one.

And that's not including anything in any kids bedrooms later on.

As an alternative to a big switch in a central wiring closet distributing all the links, I have several switches scattered around the house. This has some negatives (mainly that interswitch links could be bottlenecks, though not too much of a concern using GbE links), but with the upsides that I have fewer really long (and hard to run) links and a bit more flexibility. The cost per port is also generally better for 8 port switches than 16+ port switches, but that's usually not too big a deal unless you are talking about managed switches.
