Dual 6600GTs is a lot of 3D power to saddle with only 128MB RAM. I'd take the X800XL, with the expectation that it'll be (slightly) faster most of the time, should be cheaper once prices reach MSRP, and makes for a simpler install.
How much do 6800GTs sell for in Portugal? If you can find one for the same price as an X800XL, that makes your choice simpler: 2x6600GT or 1x6800GT? I'd probably take one 6800GT over two 6600GTs, b/c I've developed a taste for AA+AF and high-res textures.
