I add about 1.5 times as much water by volume as rice, add a little salt, cover and heat to a boil, reduce heat to a slow simmer and cook around 1/2 hour. Let stand until almost cool. It's not too sticky. I refrigerate the pot and usually stir fry portions of it later for that crunchy fresh flavor. I was using Basmati but now use a long grain rice grown somewhere in the heartland of America - buy the stuff at Costco in 25 lb. bags.

How do you know if it's true Basmati? I used to buy the 11 lb. bags at Costco. I have a CD photographic tour of Vietnam (Passage to Vietnam, it's really, really beautiful!!!) from around 1994 or so, and they tell the story of how rice is dumped at the side of the roads and they just leave it there for vehicles to run over it until it's dehulled. It made me wonder just how clean and unpolluted that stuff could possibly be !!! :confused::evil::Q

Now, that may be no reflection on other Asian rice, Basmati and Japanese in particular, but I know for sure they don't do stuff like that in America. That's why I'm buying American rice these days.

I eat packet rice at work....it sucks....but it's healthy. Gotta love nice light fluffy rice, some chinese restaurants in my town get it spot on....others make you wonder if the rice was scraped out of the bin....
