If your not happy with any of the other suggestions offered you could download a program such as Tweak XP and use the folder protection feature to lock the folder containing your AIM logs. Then even if the folder resides on your shared drive she could not get into it.

Change all of your passwords, password protect your BIOS turn off boot from CD/floppy/USB.

I'm not sure as to how AIM work, but could it be possible that she copy your log file onto a floppy/USB/CD/HDD then take it home to analyse it?
