Quinoa $1.99 per pound raw, complete set of amino acids, 15 minute prep.

Just fixed some for the first time with some chicken stock and garlic. Much tastier than brown rice and I like the texture better as well.

Stir fry

Thaw a chicken breast, dice it, pan fry lightly in olive oil, add frozen veggie stir fry mix, heat and continue to toss. Season to taste and serve over rice. I like a bit of ginger and a splash of soy sauce.

I posted this one in another thread-

Poach 2 chicken breasts, then cube, or shred as desired
1/4 (combined)celery chopped and/or water chestnuts
1 tablespoon lemon juice (fresh squeezed is best of course)
slice into halves, or leave whole, 1c red or green, seedless, grapes I like the sweetness of the red myself.
your favorite sea salt and fresh ground pepper to taste
1/4c plain low-fat yogurt
1/4 low-fat mayo.


Mix everything but the grapes together, then gently fold the grapes in at the end, and chill over night. Serve on a bed of your fav. lettuce or spinach, sprinkle copped almonds, and enjoy.

A stand-by in my kitchen, is high protein multi-grain pasta with a fresh tomato sauce-Just prepare a box of the pasta according to directions. Meanwhile, while water is coming to boil-

dice 3-4 good sized tomatoes
mince 3-5 cloves of garlic, depending on their size and how much you like garlic
1/4c extra virgin olive oil
at least 1/4c fresh chopped basil and oregano
your favorite sea salt and fresh ground pepper/s to taste

toss in a bowl and let sit until the pasta is ready, drain the pasta, don't rinse, plate your desired portion, throw desired amount of the tomato sauce over the hot pasta, toss it lightly, and enjoy. Sprinkle a little of your favorite Italian cheese blend if desired.

Any fish will typically cook in <= 30 minutes. More complex recipes notwithstanding, just choose a method (grilling, steaming, broiling, NOT frying for health reasons), add some salt/lemon/butter/spices, and let it go.

Actually, now that you mention fish, I have a GREAT little one for you. Take a ceramic baking dish, put in a few pieces of your favorite fish (talapia is a good tasting, inexpensive choice) and give it a little spray with some non-stick cooking oil, shake on some italian seasonings and then cover with a light dusting of breadcrumbs (or you can buy Italian seasoned breadcrumbs) cover with saran wrap and microwave on high (for 2 normal sized pieces of talapia I go for about 6 minutes). Makes some DAMN tasty dinner thats quick and cheap. BTW this is the method most restaurants use to cook fish, as fish is best when cooked quickly at super high temps (stays moist), just make sure you have a good seal with your plastic wrap so all the water vapor stays in the dish. Also, have some oven mits ready to peel off that wrap (watch out for steam!) and hold the dish, it'll be SMOKING hot.
