Texas BBQ is awesome too, but KC is by far my favorite.

anyway, real texas bbq does not use rely on heavy tomato based sauces. that is KC bbq. please update your poll to remedy this glaring, and insulting, discrepancy.

LOL. I disagree - KC sauce is usually more brown sugar, molasses, etc. However, feel free to propose a better description of TX sauce and I will happily consider it 🙂

In fact many Texas BBQs like Mueller's are sauceless.

real texas bbq (the kind of the german immigrants in central texas) uses no sauce. sauce is purely optional, and only really provided for you amatuers who expect ketchup thrown onto your meat.

This is correct. Any good bbq place (which is practically all of them) in Texas will aske you if you want sauce on it. It is not mandatory in Texas bbq.

KC style

I would say I'm biased...being from Kansas and all, but the best place to get BBQ is Gates in KC...if you've been there, you know. It's not just the food, it's the atmosphere

also on the poll should be Brazillian/Argentinean BBQ.

Their sauce is not applied during cooking but afterwards and is more watery in consistency.

It is made of vinegar, garlic, and chili typically.

The only heavily tomato based sauce I can think of is Rudy's, and thats a chain and not really representative of Texas BBQ.

rudy's is, of course, applied by the customer, rather than burnt onto the meat. their meat is good enough to stand by itself.

yep, KC style. Gates' sauce will knock your socks on your ass! unfortunately i think their meat isn't as good as it used to be. Now if they had BB's Lawnside meat with Gates' sauce. that would be heaven.
