I think I got the interpretations of the styles fairly clear, but let me know if I should clarify any....or if I missed any.

Also, to be clear we are talking about BARBECUE which is the process of smoking meats at low temperatures and indirect heat for long periods of time, not just cooking something on a grill.

Yes, the word "barbecue" has become common parlance for "cooking outdoors." That is exactly why I defined what I meant by barbecue.
 
Texas BBQ does have ribs and pork and sausage too but most people consider beef the primary meat in texas BBQ......

Per your descriptions above it seemed to indicate that Texas BBQ was only beef while KC/Memphis did more....

I figure "Usually beef" indicates clearly enough that the other meats are used as well, but that beef brisket and beef ribs are "garden variety" so to speak.
 
i guess this BBQ is way too 1337 for me. i never thought a topic on BBQ would leave me feeling so lacking in the worldly knowledge dept.

I voted for Texas BBQ because I live here but I don't know why everybody knocks the asian BBQs, they are pretty good.
 
I've had most styles. KC is probably my favorite. Carolina style is alright, but I don't like the sauce. I'll pass on the Memphis style .. I like it saucy. 🙂

trust in a yankee to not know what bbq is.



anyway, real texas bbq does not use rely on heavy tomato based sauces. that is KC bbq. please update your poll to remedy this glaring, and insulting, discrepancy.
 
El Fenix is correct.

In fact many Texas BBQs like Mueller's are sauceless.

The only heavily tomato based sauce I can think of is Rudy's, and thats a chain and not really representative of Texas BBQ.
