I was always a fan of hiding food in a forgotten corner of the office. Gradually, the food will rot and the smell will (hopefully) intensify.

Haha we've thought of doing that to our IT manager. Stick an onion up the vent or something. Oh man, that would SO reek after a while.
 
Completely reverse everything in his office. Think of it this way. If his stuff is organized right handed just reorganize everything for a lefty, turn all his pens an pencils upside down, squirt some superglue into his box of paperclips.

oh there was a thread on here one time that featured a device that emits a beep very similar to one of the windows xp alert noises or the POST beep on boot up but the interval is completely random. it is frequent enough that the victim usually spends hours trying to find the source but it happens infrequently enough that it is difficult to pinpoint.

Annoy-a-tron 2.0

Now that they've mostly recovered from the twisted mind maze that was the original Annoy-a-tron, send them on a new journey of "self discovery" with version 2.0 Now featuring 6 sound choices plus volume control, it's at least twice as fun (and annoying) as the original. For effective deployment, we humbly suggest the following sound and volume combinations, but you can conduct your own field research for more insight.

Annoy-a-tron

The Original ThinkGeek Annoy-a-tron would be useless against an army of Snowbots, but it's very effective at disturbing that guy in the sales department or your "friend" down the hall. With its thin design and embedded magnet for easy hiding, the Annoy-a-tron can be placed in a variety of locations. Select one of the three sound choices (2 kHz, 12 kHz, or alternating) and push the switch to the on position. Place it in a proper hiding spot and let the "fun" begin.

Evil-tron

This fiendishly small device features six creepy sound choices perfect for frightening your "friends" and co-workers. Simply choose your favorite sound (or use the random mode), place it in a dark hiding spot and watch the madness begin. Perfectly suitable for dorm, office and home use. Or try putting it in someone's car - that gets them every time.

We use to take bagels, smother them with cream cheese, and hide in his office. They often wouldn't smell, but it was interesting because we hid them in such a way that we could see them (and he couldn't) when we were in his office and by the time he finally found it (like after a year), it was like concrete. We also tried a container of cheese sauce but it also disappointed us because it never really smelled.

Another thing we used to do was eat bananas and then hide the peelings in someone's office. I was cleaning out my bookshelf at work once and found a petrified, rotten banana peeling that had to have been there at least 6 months. Good times!
