Ok so here's my 2nd attempt. I don't want to actually cut into this one till the party tomorrow, would like to show it off whole so it's a bit of a shot in the dark but I think it should be better, the first one was good anyway. It looks better already anyway. Some changes I made are that I used twice as much pumpkin pie spice as the first one to give it an extra kick, I used a 3/4 brown + 1/4 white sugar ratio instead of all brown, and I baked this in our main oven instead of a toaster oven. The reason for the change in the sugar is cause I noticed that what I was using was actually a darker brown sugar than the light brown sugar called for in the recipe.

AND since I made all this from scratch from a larger pumpkin we have a shit load of pumpkin puree left over so I thought I shouldn't let that go to waste. So I made Pumpkin Chocolate Chip Cookies, yes they taste very good :D :

And I helped out a lot with the main curry dish my mother is making. Yes Curry for Halloween, hay we are a 1/2 Asian Family :p This tastes even better than it looks, yumm

So tomorrow I'll make the spring rolls, got the "stuffing" made, and one other dish and we should be set :D


My OP
Never made one before but my Apple pie is usually killer and I'm good at cooking so I'm hopeful this will turn out well. I'm just going to be using one of the more popular internet recipes (with a few mods). Using a pumpkin I picked up at a nursery sale a few days ago. Going to be making this for a family dinner we have coming up in a few days so I want to make a test one first to see how it turns out.

UPDATE:

OK here's the result of my first try. Taste is just about 95% there. Texture is off, BUT I think that's cause I didn't let it sit long enough to congeal before trying it out (was still too mushy), I'm hoping it will harden up when it cools down. Unfortunately I burned the bottom. If I have time I'll make another before the party on Sunday, should be near perfect for that one :) And yes the crust is hand made as well and very flaky.

I also cooked this in a small toaster oven instead of the big main oven so temperatures were probably far too uneven.

In my experience I've found that making a pumpkin pie with a fresh pumpkin vs canned pumpkin is a huge waste of time.

The biggest difference is, to me, is making your own pie crust.

Freshly ground nutmeg makes a significant difference. And, yes, canned pumpkin is just fine.

Pumpkin pie is okay but I defer to good apple pie.

Pumpkin cookies, on the other hand, are awesome this time of year. As far as texture goes, it's like a thicker cake. Mix in chocolate chips, bake. Frosting made with milk, powdered sugar, brown sugar and a little maple syrup, hardens when it cools. So addicting. :wub: Hard to make without a proper stand mixer.

The biggest difference is, to me, is making your own pie crust.

I do make my own crust. Yeah I've heard that canned is better. Or did you mean it ends up tasting the same but with more work?

canned is NOT better.

buy a cooking pumpkin (they're smaller than the huge ones for carving). rinse, then slice in half. scoop out all the innards like the pumpkin seeds. place on baking pan face down and bake (at 425 degrees for first 15 minutes, then 375 degrees for the remaining time) until the skin collapses (about 45 minutes). pumpkin will be tender and skin easily removed. if u want it smooth (not clumpy), put in a food processor. voila!

Well I didn't buy a cooking pumpkin, I bought a carving one, will have to see how this turns out but those are the same steps I'm going to follow.

canned is NOT better.
I wouldn't say canned is better, but no one could tell the difference compared to canned and it took a lot more effort.
I've done it myself once and I've had others make it from fresh pumpkin.. no difference.

I have pumpkins... what next?

follow the pumpkin cooking above, then...

here is my family's recipe. this is per pie. easily doubles or quadruples. pies are best made in pairs

1.5 cups pumpkin
2/3 cup milk
2 beaten eggs
1/4 tsp salt
1/2 cup sugar
1/4 tsp ginger
1/4 tsp allspice
1/4 tsp ground cloves
1/4 tsp nutmeg
1/4 tsp cinnamon
mix the first three together, then add the rest, mix then add to pie pan.
450 for 10 mins then 325 for 45 minutes.
If it is still soupy depending on how your pumpkin was to begin with just add 5 mins till thickened.

I just use a simple shortening crust, makes two crusts.
1.5 cups flour
1/2 cup shortening
cold water as needed.
cut the flour and shortening together.(two forks works well, but you can use a food processor) add water in teaspoons till pliable. the key is to stop when it is able to be rolled out, but before it becomes dough-like. You can chill the dough in the fridge for a bit to help rolling.

I find sweet potato pies are easier to make from scratch. Very similar to pumpkin, and you don't have the seeds to mess with.

Pumpkin pie is the best pie. My GF wants to bake one from scratch and got a cooking pumpkin the last weekend. But fuck making our own pie crust from scratch. If anything, we'll get a pre-mix where you just add water and roll it out. Worked just fine for our apple pie a month ago.
