Pumpkin pie is the best pie. My GF wants to bake one from scratch and got a cooking pumpkin the last weekend. But fuck making our own pie crust from scratch. If anything, we'll get a pre-mix where you just add water and roll it out. Worked just fine for our apple pie a month ago.
Pie crust isn't that hard, although I'll admit there is a learning curve. Once you get a feel for the texture you're looking for it's not that hard. And, don't be afraid to throw everything back into the fridge if you spend too much time rolling it out. You have to keep everything really cold making pie crust.

I've heard really great things (from Cook's Illustrated, no less) about the Pillsbury pre-made pie crust where all you have to do is unroll it and lay it in your pie plate.

it's no substitute for a home-made crust, but it's probably the best amongst all the premades.

i'm buying 7 pumpkins this year... if i follow through on my original plan to do the entire main cast of my little pony:friendship is magic.

For the Apple pie crust I've always made I just use an old recipe from an old cook book I've had around for long time. I use vegetable shortening, yes I now FAIL but anyway. Basically I just mix the flour, water, eggs, sugar, salt, shortening, ect... together till the consistency is right. Form 2 balls for both 1/2s of the pie and roll them out. Simple as can be. I know the probably way involves a lot more steps and making sure it's always cold as you say but the crusts I make this way have always turned out very well.

follow the pumpkin cooking above, then...

here is my family's recipe. this is per pie. easily doubles or quadruples. pies are best made in pairs

1.5 cups pumpkin
2/3 cup milk
2 beaten eggs
1/4 tsp salt
1/2 cup sugar
1/4 tsp ginger
1/4 tsp allspice
1/4 tsp ground cloves
1/4 tsp nutmeg
1/4 tsp cinnamon
mix the first three together, then add the rest, mix then add to pie pan.
450 for 10 mins then 325 for 45 minutes.
If it is still soupy depending on how your pumpkin was to begin with just add 5 mins till thickened.

I just use a simple shortening crust, makes two crusts.
1.5 cups flour
1/2 cup shortening
cold water as needed.
cut the flour and shortening together.(two forks works well, but you can use a food processor) add water in teaspoons till pliable. the key is to stop when it is able to be rolled out, but before it becomes dough-like. You can chill the dough in the fridge for a bit to help rolling.

Your recipe is ok but, I'd bump all the spices to a 1/2 tsp each.

My MIL uses vegetable shortening in her crust and she is pretty much the apple pie queen. She taught me how to make her awesome crust because my mom doesn't bake. Anyway, to make great pumpkin pie, just follow the recipe on the back of the Libby's pumpkin pie filling can, except use regular milk instead of the evaporated milk it calls for. It's super good.

UPDATE:

OK here's the result of my first try. Taste is just about 95% there. Texture is off, BUT I think that's cause I didn't let it sit long enough to congeal before trying it out (was still too mushy), I'm hoping it will harden up when it cools down. Unfortunately I burned the bottom. If I have time I'll make another before the party on Sunday, should be near perfect for that one :) And yes the crust is hand made as well and very flaky.

I also cooked this in a small toaster oven instead of the big main oven so temperatures were probably far too uneven.

Did I/we said you had to use a "real" pumpkin? :confused:

But for my own personal satisfaction it feels good to make it from scratch.

But no one cares in the end if it tastes good :p

yeah... I wanted to but my gf wants to carve pumpkins and crap tomorrow. All I want is pie, sex, and Grand Theft Auto: Liberty City Stories. Plus you can't use carving pumpkins to pie :\

In my experience I've found that making a pumpkin pie with a fresh pumpkin vs canned pumpkin is a huge waste of time.

The biggest difference is, to me, is making your own pie crust.

This is true, I made one from fresh pumpkin the other day, I couldn't tell the difference between the two, except for spending 2 extra hours precooking and seeding 2 pie pumpkins.

The cooking and seeding is easy. It's the scraping and mashing after that that takes the time. I'm happy I went this route though, just so I can say I know how it's done :p

And now that I have so much mash I'm thinking of trying some other Pumpkin dishes. Shame to let this go to waste. I think someone here mentioned Pumpkin cookies, I'm going to try Pumpkin soup.

LOL that would be awesome. Don't have the equipment for making beer here though. I did once make a batch of "home made" beer at one of those wine making places. You know the places where you plunk down an order for 30 bottles of wine they do all the work then you come back 6 weeks later to bottle it yourself. So yeah that's not making it yourself :p But damn that was actually very good beer!

I will say, that it was neat to make one from scratch though, I usually end up letting them cool down on the counter and then chill it in the fridge to get it to firm up.

If you want to easily impress your friends & relatives, pick one of the spices in the mix and add a little extra of that, then you can say you used your own secret spice recipe. I like extra ginger, gives it a subtly different flavor and a bit more bite - people notice it.

There are several different pie pumpkin breeds. Look out for them if you want a good excuse to make yet another pumpkin pie :thumbsup: .

Ahh yes very good idea, thanks. Love slicing ginger anyway, mother is Chinese (expert knife skillz), always like an excuse to shop some shit to some insane level of granularity ;) :cool:
