I'm really confused by your situation. Seems that you should be able to OC better.
My 165 is at 2.5GHz and runs Dual Prime Stable for 8 hours (haven't run it any longer than that because I like to use the PC

Looks like we have the same RAM. It seems pretty irritated by little changes, but once you figure out what works on your MOBO its all good.
My RAM had been holding me back as well, until I read a thread that talked about a couple of their batches being sent with the wrong timings. Go into your BIOS and make sure yours are set to 3-4-4-8 and not 3-3-3-8. Once I made that change it took care of everything. Prior to that I was messing around with my volts etc... and then found out that it was just the timings.
Also are you using a divider?
My ram can run 250 or even 260 at 1-1, but once it goes above that I use a .9 divider.
