you'd need a device with video in of some sort. i could record a video with my digital camara but it would be 320x240 with scanlines all over the place, so that really isn't going to show much.
 
If you have a video card with Video IN via Composite and/or S-Video you could easily do it and capture the resulting video. If I had an XBox I'd give it a shot via my TV Tuner. 😉
