There is still something I don't understand, I've been using 2x Leadtek 6800 NU, from 325/600 @ 410/779 when I was using forceware 66.93 it reads at 34C IDLE and 56C Full-Load, but all other forceware version the reads my NUs at 55C IDLE and 77C Full-Load which 1 to trust?

Note: When I touch the card's heatsink during Full-load it doesn't feel hotter than 70C

Hmm, you could pick a thermal sensor from somewhere and measure it manually. I know a lot of 6800GT/Ultras full load around 70C though.

The drivers do have an impact on how hot the card runs, due to the different modes they program internally. Also, there were several Forceware releases over the last year that caused complaints that they made cards run hotter.
