I am in the process of picking out a mATX MB, and narrowed it down to GIGABYTE GA-73PVM-S2 vs ASUS P5K-VM. The Nvidia is single channel memory, and the G33 is a dual channel memory. That is the only significant difference that I can see. Will the single memory channel significantly affect performance? Which offers better performance? Overclocking?

That Asus board is a known good overclocker. If you're using a PCIe video card, then go for the Asus board. If using onboard video, probably the Gigabyte.
