Is there a way to maximize windows (like finder) in the same way that windows maximizes windows?

Using the + on the top left maximizes it a little...but not like, a full screen maximize. I've been dragging it out using the bottom right corner. Surely there must be a faster way...

There isn't.

There is no full screen maximize because... I don't know why and really don't care. I maximize stuff in Windows, but don't maximize the same sort of things in OS X. Its weird, but I think it is because I generally don't need 1280 pixels of width on my windows, let alone more than that, and OS X window management seems better than Windows (ironic I know), to me at least.

I doubt you care, but this is one of the things you have to get used to if you want to use OS X to it's full potential. It can seem like there's just too much clutter at first, but once you get the hang of positioning windows, hiding stuff you don't need in your front most view, rinse and repeat... it will seem much better than the Windows approach. Or at least it has for me.

I hate having full encompassing windows on my screen. It takes up too much real estate and I can't ever find anything when they're like that. It was an adjustment for sure, but it's been for the better, I feel.

But if you simply can't deal with it, RightZoom is the way to go.

The funny part is you are right. I find that I have this safety blanket that is Windows. If I can't get used to something in OS X then I always have Windows to fall back on. However, I started making myself find alternatives in OS X and it's become a much better experience. I think there should be a great article written that goes through all these things and shares the best way to go about transitioning from Windows to OS X. It could list programs, plugins, etc... I might try working on something like this... but I know it'd be a ton of work.

There are really only two things I use Windows for anymore: 1) Gaming, 2) Web Testing. Everything else I've made work in OS X and I am much happier with the overall experience.
