Good beers, but my all time fav is Chimay. I am drinking a Lagunitas Sirius right now, and suprisingly it is pretty good.
 
Another big ups to Chimay Blue (Grande Reserve) - I keep a few slots in the wine rack stocked with this stuff. Three Philosophers wasn't to my liking... too much cherry flavor. I stock up at the Metropolitan Markets and Whole Foods stores.
 
I recently found a bar near me that servers St. Bernardus ABT 12 and Piraat Strong Ale on tap.

I've never heard of those beers, so sorry for not being the beer connoisseur. They look good though. :beer:

My knowledge is pretty much limited to the standard domestics and others, e.g. Fat Tire, Harp, XX, etc.

Favorite is XX anywhere, anytime, but I don't know any better, unfortunately. 🙂

Hoegaarden is by far my favorite Belgian beer. I recently had Leffe Blonde for the first time and it's awesomely good as well, though a tad sweet.
 
Looks delicious. I wish I knew where I could pick up some brews like that in NYC. Ever since I moved here I still haven't found my "go to" beer shop.
 
schneider & sohn aventinus is the bee's knee... their doppelbock is something else, also.

overall, imo, the germans have the belgians beat -- no contest.

i had 750mL of chimay blue (grand reserve) and red last night... very overpriced, if i must say something about them.

for american microbrewers, avery (from Denver, CO) is putting out great stuff

Naw, that is too foofy for me. I use to drink this beer when I was in Germany called Perminator. Man that sh!t would rock your world!!

I have Chimay Blue and Red, but it's far from my favorite.

I have several Framboise Lambics, but I don't find them that appealing; way, way too fruity for me. I have several blended ales and some with fruit lambic. I also just finished a Liefmans Frambozen; not quite as fruity.

Holy crap man, now that's the kind of bar I"d like to find 😀 Some of the bars around Cleveland serve your better beers, but very few on tap.

And the crazy thing...is that it's only $5 for a pint draw! You get more bang for your buck along with an infinite amount of quality going with a St. Bernadus draft than you do getting two Budweiser draws at $2.50 a pop.

Certainly...

First, I cellar the following:

- Coffee beans. I roast a lot of coffee, and I keep a lot of greens in storage. I just roasted some Ethiopian Yirgacheffe, Sulawesi Toraja, and a little Indian Mysore Nuggets last night.

- Wine. I buy some of my favorite wines and keep them around to see how they mature, but I store a lot more wine that I make. I generally stick to so-called "country wines" as there aren't grape varieties suitable to my climate to be found.

- Beer. I also brew my own beer, and my affinity for Belgian Strong Ales is my "research" (I use that term loosely 😉) into the style; I really hope to be able to produce a brew worthy of the style. I'd also like to concentrate on the Saison and Lambic styles. A banana lambic blended with a Belgian Strong Ale would be oh-so-good, in my opinion.

So, given that I cellar all of the above I need an environment with appropriate humidity, temperature stability, and darkness. My basement back at my home (as I said, I'm in Cleveland for a while) is suitable for these purposes.

If I am aging my own wine I will likely store them in carboys/barrels depending on what I am trying to achieve. I will keep them like that until I bottle them. I will usually do the same for my beer if necessary, but mostly I bottle them and just store them in boxes. I keep my coffee beans in breatheable cotton bags. The temerature is anywhere from 50F to about 60F, and humidity is ~50% or so. I said "wannabe cellar" as I need better humidity control, and I also need to separate my coffee beans from my wine/beer as the coffee can't withstand the higher humidity that's better for wine storage; of course, some of my wine bottles are screw-top or synthetic cork, so it negates some of the need for humidity control.

BTW, I'll be drinking a Saison by DuPont tonight.

Thanks! I'll give that a try if I can find it. I enjoy trying US-brewed Belgian ales. As I said, I love the style, and I love supporting US breweries that produce such craft beers.

- Schneider Aventinus. It's almost obscence how good this Weizen is. I have a few cellared since '99.

I'm in Cleveland right now, so this is all I have with me. Back at home I have more waiting for the right time, but these alone will keep anyone busy for years with their complexity.
