I can understand that you have to adapt to cattle as it's not a big pork-production area, but it sure as shit shouldn't be called BBQ, because it isn't.

simply put:

thick sauce : BBQ :: A1 : steak.

central texas barbecue does not have thick sauces. in fact, many places get insulted if you put sauce on it. usually you'll find a thin, spicy sauce.

south texas barbecue developed from what mexican ranch hands would do with their payment (they were often paid in very undesirable cuts of meat). mmm barbacoa.

only east texas barbecue has a thick sweet sauce, and those people learned it from the south. east texas barbecue also prominently features pork. and red hot sausages.

so much fail it hurts. I've never had an over-vinegary recipe. It's pretty difficult to do, as vinegar merely intensifies the pork flavor.

Beef + thick sauce...is not BBQ. it's like calling a "grill" a "BBQ." so stupid, so wrong.

Notice I didn't say beef + thick sauce. I said sauce was ok and beef was ok.

Sauce should be used for some ribs and some pork butt.

Beef Brisket should be dry-rubbed only.

Beef ribs are not a viable BBQ ingredient.
 
I actually don't mind a bit of sauce...served on the side, I just don't want the meat drowned in it.

For MOST things, rubs are better than sauce.

Beef ribs make GREAT BBQ, in fact, it's the only way they should ever be cooked...

One thing is for sure, when it comes to BBQ this topic is JUST like what I see watching TV. People have their opinions about who has the best and no one can win. I enjoy seeing the different places they show on the travel channel etc and wish I could try and compare Texas Memphis, Kansas City etc. But here on the west coast we get what we get, plenty of places claim to bring the style found in other states here and I really cant say if they got it right or not. All I can say is I liked one place and didn't like another, that's all anyone here can say cause like I said its personal opinion. I have had the slow smoked ribs at 2 different places, one I liked one I didn't. In closing BBQ rules even if I am not getting the so called best, I am just happy to leave a place enjoying the meal.
 
BBQ can be incredible with the right sauce. That means none of that sweet crap from Texas, vinegar based or nothing. It can have some tomato product in it, but its gotta have vinegar to make it right. Sadly very few places these days will stick with this tradition.

Thankfully I'm in Georgia so good BBQ is not at all hard to find! For fast food Shane's Rib Shack is pretty good and reasonably priced.

he is right and wrong at the same time. Beef is better than Pork if you want oh I dunno a Hamburger or a Burrito or Nachos. As for BBQ? Beef is less desirable than Chicken.

That is simply not true. The only sauce you need is some red vinegar sauce, there's not a ton of flavor in it but it perks up the taste buds so you can enjoy that delicious piggy and his bark. If ribs or other piggy need a big sauce something is wrong.
