There are some Athlon 64 notebooks, but none of them (except I think a couple of extremely expensive ones) have PCI-E graphics solutions, so you're stuck with a Mobility Radeon 9700 as the fastest video card available. The laptop I just bought in my signature will actually be very respectable in games.
As for workstation apps, the Pentium M will be slower for those that you mentioned, but that's the sacrifice you have to decide on.
