There's a diner down the block from my office that serves only Hungarian and Slovenian sausage/sandwiches, cabbage rolls, chicken paprikash, pierogies, cabbage and dumplings, and mashed potatoes. The place is always lined up out the door. So while I do agree with your statement, I am apparently living the dream.

I make all of that stuff. And potato pancakes.

there aren't enough perogies in this world. why don't fast food places offer perogies as a side? they are the best use of potatoes ever. i think someone could open up a chain of restaurants with perogies as the main staple of their menu. think of all the different things they could stuff them with. there could be dozens of flavours and several different ways to cook / prepare them.

just the other night i had a BLT with a side of perogies, boiled and then fried with onions and bacon. it was better than any combo from a fast food place i can think of.

I think there's a hot dog place called Yokko's in PA that sells deep fried perogies.

At work we had some event and I picked up a bunch of cherry? and potatoe perogies and they were damn delicious. It was a Russian place I think and they also made this really awesome fruit salad.

and they are the most disgusting hot dog places around. Granted a deep fried perogie is good, this is PA and deep frying a perogie is the norm.

I love perogies of all shapes, sizes, and fillings. I make them all the time and have them with various accroutements (bacon, sausage, sour cream, sauerkraut, onions).

When I was a kid my Baba and I would pick wild blueberries and then make blueberry perogies and top them with butter and syrup or brown sugar; they were freaking amazing.

I just use cheddar cheese grated and mixed in with the mashed potatoes and bacon. Really it's just endless the different cheeses you could use. I've made the sauerkraut pirogies but I like the potato cheese ones better.

Your perogie place could also sell pelmeni. It's one of my favorite "wow, what's this?!?!" moments from eating at my in-laws place. I keep them on hand in the freezer now. Pot of boiling water and boom, dinner!

Traditional recipies call for farmers cheese, which is how I like them, but you can put whatever kind of cheese in them that you want.

They aren't difficult to make either, or require too many ingredients, tons of websites have the instructions. It's hard to screw them up too, I can't cook anything, but I've made them without any issue.

Correction, I screwed one up making it the size of a half pizza with some left over ingredients. It was too mushy, and boiling it didn't go well. My wife commented that I have to make everything "American"

ITA. There are no Polish restaurants in the area. I really need to get some of my grandmother's recipes and start making Polish food on my own (my great great grandfather came to the U.S. from Poland).
