My roomate put some odd soy sauce in the fridge. Anyway, I have the no name, really salty version and his was a more bitter, but better tasting (almost reminded me of alcohol) type. I didn't realize that Soy Sauces were made differently.

Why wouldn't people think that soy sauce can be different? If water and every other cooking product has different tastes and products...

My family has gone through every brand to pass through our local asian-market shelves, probably :p

La Choy is the only kind I like. The wife bought some other brand once, and that was the nastiest crap I've ever tasted. I usually get sweet and sour chicken, hold the sweet and sour sauce. I turn the little box of rice upside down in a bowl and then place all the chicken around the rice, then douce everything with a shitload of la choy. Takes me about 3 glassfulls of water to finish it. That as chinese as I get.

ugh I hate dark soy except when used in cooking. uncooked and by itself tastes vile to me

back on topic though, there's many types of soy sauces out there, and even each brand tastes different even if it's the same type.

The best Soya Sauce I've ever tasted came from the Philippines. Not too salty, not bitter, just nice and smooth.

Real soy sauce is based off fermented soy beans.

What you have is probably the imitation made from salt and caramel color.

Most US soy sauce is not even really soy, it is wheat based. Kikkoman(sp) is wheat based.

My wife, Asian, got me hooked on Maggi's red cap soy sauce. Is about $8-$10 a bottle at most Asian stores.

I prefer Japanese soy sauce as a rule & I've tried many different brands of widely varying quality ... don't know why his would be a surprise.

Lol, Chinese people don't put soy sauce on rice... It's for dumplings and stuff.

edit

My choice of soy sauce is Kimlan. Been eating that my whole life.

They are all different, I prefer kikkoman, even though it is wheat, saltwater and caramel coloring. Maggies is good also, especially with thai food.

Kikkomans is this shiznit. This "fast food" Japanese steak house I frequent uses Kikkoman in their table bottles (they buy the stuff in 5 gallon buckets!), BUT, if you get it to go they give you the crap generic packets of soy sauce. There's a huge difference.

I used to ask them to give me Kikkomans packets instead (sneaky bastages kept them in the back) and they'd ALWAYS revert to the "I'm Japanese and suddenly have a language barrier problem that prevents me from understanding your request.".

But since I eat there almost three times a week they now are all good friends and hook me up without asking.

fyi: I do work for the company who was ranked first ;) however, the publication is Cook's Illustrated, supposedly an independent media. We didn't pay them a dime for the review/comparison.

LOL, I remember watching a Korean show about weird science stuff. They made some soy sauce made from hair (I don't recall how they did this) and went around to offer it to celebrities to taste. It was hilarious watching the reactions once they were told what it was made from.

It's not raining here. I live in the land where my own opinion outweighs the one someone else tries to give to me.

Some of my recipes come out radically different based on which soy sauce is used, so I have to make notes as to which ones are best when sharing said recipes.
