Update:
Turns out at least one of the freeze plugs was rusted/leaking, thus causing the coolant level to drop......sigh. And, naturally, they're not too easy to replace w/o a lot of monkeying around/cost. Had all of them replaced. It's been a few days since I checked the level. I'll get to it today

and are bits and pieces stuck somewhere in the engine?

yeah, that's where the impeller thing used to be. Now it's just a jagged spinning wheel o' death lol. It just got ground down to nothin from all the rust flying around in there.....yikes!
