I would have said Outcast but an updated version of that game just hit Steam so I'm happy there.
 
I'd probably have to say:

Dark Sun - Shattered Lands (linked it because most might not know what that is)

Dark Sun, you made my day! I spent so many hours with this game, try so many group combinations and enjoying the game everytime I fired it up.

I will also add: Crusaders of the Dark Savant. A Wizardry series game that was so immersive and amazing. I remember spending hours just to create the perfect party including a Dwarf Lord or a Samurai or Ninja 😛

I also remember having a blast with Menzoberranzan...

Except for Mars Saga and Monkey Shines (That I have looked up) all above can still be played with at least some sort of VM.
 
The Sierra adventure games hold the most nostalgia for me. Especially Space Quest III, since that was the first one I ever played. I have played them recently though, and they aren't as good as I remember.

Adventure games have a problem for me, once I play them once that's it. I see no reason to play them again if the change is only graphical, as I already know what to do and what will happen.
 
I don't have nostalgia for MOO, MoM, or X-Com since I still play them occasionally and they are just as fun as back in the day. What I do have nostalgia for is RPG's that you only get the full experience the first time through. For me those include Final Fantasy 2, 3, Chrono Trigger, Ultima 7, 8, and maybe UO.
