If it overheated it could crash the computer, yes. Usually you'd see some errors in the system event log, particular programs crashing, but it could also just plain shut the system down. Easy way to determine if heat is the problem, just take the side of the computer off and point a household fan into it while you use the machine. Of course it might be some other part of the machine that's overheating.
 
Some motherboards (I think DFI boards have this possibly others) have a shutdown temperature for the chipset. I could be wrong though.
 
A lot of boards have a shutdown temp for at least the CPU, though it's not on by default. Not many of them I expect would have a shutdown for the chipset since that would require an extra thermal monitor, and wouldn't be particularly accurate since the chipset isn't mounted in a socket so the thermal probe would be nowhere near the actual chip.
