Say you have a mobo that supports up to pc2700 ram, and you try to put in a pc3200..will the RAM revert back to pc2700 or just not work at all?

PC3200 is backwards compatible.

So it will stay at pc3200 even in a mobo that supports only 2700?

I didn't say that. It will run at PC2700 even though it's PC3200. You can't get around your MBs limits.

 
You want to make sure you buy PC3200 that's supported (density), by your MB chipset.
If you're running a non-Intel based MB, you should be safe with just about any PC3200 out there.
