Noob E-mail Server Question

I have been doing some reading on setting up an e-mail server the problem is I can't afford a static IP to my place. I know there are a lot of ways to get my own e-mail but as a student I want the experience of configuring everything myself. I looked into a service provided at www.noip.com and basicaly what it does is I put software on my comp that updates to their servers what IP I am using at the moment (as my IP is dynamic) and it assigns my DNS name to my current IP. I know I could do a web server like this b/c all someone would have to do is type in www.billiloveyou.com or something and it would take them to my page, but is there a way to use this to allow me to set up an e-mail server?

I know the explanation might be long so even if you could just point me in the right direction to research myself I would greatly appreciate it.

BTW I am probably going to use Microsoft Server 2000 first then when I figure out that I'll try it again in Apache or something. Thanks in advance!
 
All of them do what they suppose to do. The page on my above post has a link to a big list that describes thier services and what is free.

I personally use no-ip.com for redirect, and myip.us for general use.
