I have a huge list of things that I don't like about the iPhone - the lack of voice dialing is just one of many for me.

1. The iPhone is tied to AT&T, AT&T's plans are not cheap, and 3rd party apps aren't supported (although they exist anyway).
2. You can only synch one type of data to one computer at a time. My iPod nano could sync on any authenticated computer, but an iPhone is tied to just one computer. This is a particular pain for me due to the way that I do calendaring.
3. Bluetooth support doesn't allow you to synchronize over bluetooth. Why do I have to carry that white cable around with me to sync when I have bluetooth? Not that this is a huge problem due to the even bigger problem in #2.
4. Bluetooth support doesn't include support for stereo headsets (A2DP). An iPod with bluetooth and you can't listen to stereo music on it wirelessly? That just seems bizarre to me.
5. The browser doesn't support Flash or Java - which means that a whole lot of websites are unviewable.
6. There's awesome Google Maps mapping software on the phone... but no GPS (except the unofficial software one, but that's made difficult to access due to #1)
7. There's amazing web browsing on the touch screen and the fairly large screen, but no 3G... leaving us to browse... slowly... over... EDGE.
8. The headphone jack is recessed - which means that the vast majority of headphones on the market won't work with it... unless you trim off about 2.5mm of plastic from the headphones... which is just annoying. Again, it's a internet-browsing iPod with cell phone attachment... why make it hard to listen to music on it?
9. There's no voice dialing, and the "favorites" contact list is two clicks deep - which is a pain while driving. The new 1.1.1 double-home button helps make this a bit easier, but it's still painful trying to call friends while driving.
10. Bluetooth support doesn't work with a lot of in-car bluetooth systems. If it does work, it is flaky, but on many car models it doesn't work at all. But that's ok - I'd get in an accident just trying to find people to call in my "favorite" contact list anyway... who cares that it doesn't work with my car speaker system.
BUT... with all my minor whining, I love the iPhone. It's a portable entertainment center, it syncs well enough with Outlook for me (calendar and contacts - with caveats #2 and #3). The wifi is very useful, Google Maps with a touch screen is wonderful, surfing the internet with it is very useable, you get used to typing on it, movie playback is great, iPod functions wonderfully. I'm very pleased with it.. but I'm already looking forward to iPhone 2.0 - hopefully with some (or most) of my list fixed.
