It seems no one wants to fly f-15's anymore. IL-2 seems to be the flight sim to beat.
I think its just the style of air battles...modern planes are target about 50 miles out and shoot. WW2 fighters are more intense.

WC2 + expansions were also great.
I've heard good things about Descent Freespace 2 but only looked briefly at the demo (fun, like flying a little Terran fighter in an episode of Babylon 5).
All space flight sims, but with WWII style dogfighting (and missiles)
