I'll be using the ASUS board, a Barton 2600+ and Crucial PC2700 DDR333 for 512MB. Should I use one 512MB stick or two 256MB sticks? Just thinking about that TwinBank or whatever stuff.

I'm using Crucial, no plans for gaming or overclocking. This is a video-editing/business rig. So two sticks?

At the price they're asking for 512Mb PC2700 Crucial, I'd recommend getting two of them$83.99 last I checked, and there is an additional 5%-off coupon code out there too. Or there's always Newegg (no sales tax for me).
