Pro defense guys are too good for the option to work. But I think I remember a game where it was used for a play. It worked just because the other team wasn't expecting.
Defensive players in the NFL are fast enough to cover both the QB and the pitch, so it's not really effective as the basis for the offense. Add in the risk of QB injury and the higher chance of fumble and it's just not worthwhile to run except as an occasional trick play.
