New rig with Dual-socket

My current rig is fine, I just built last September. E6600, 10K Raptor, 2GB RAM, NV 7900GT this thing is great. I was curios though, what if I were to buy a server motherboard with dual Xenons. Is there a reason those boards are just for servers? If I bought a dual socket board with dual xenons and a great VC would it actually be faster? I guess I don't understand the difference. This would be a mid-to-high end gaming rig. Strictly that.
