New pics from the Canon G5

Since sepia seems to be on everyones mind here... I have a general question about digital photography....

Why use the on-camera B&W, Sepia etc filters? I mean why not take the picture in color then aply a sepia filter or B&W filter in a photo editing program? It seems to me that doing it the this way you can get the image in any format you want instead of taking it in B&W then thinking "damn I this would look nice in color" and you cant ADD the color back.

What am I missing?

The Sepia on the Canon G5 sucks bigtime, its all orange instead of a washed out tan/brown..doesnt look good at all, so i sepia them in PS-7.
All others are B&W on the camera, they came out pretty damn good if you ask me!

But I guess thats my point... why even bother with dif settings on the camera. Lets PS7/CS or whatever do the work for you and that way you have the utmost flexibility.

Like i said, the Sepia on the Canon G5 sucks..so i dont use it anymore..WAY to orange for some reason..not really sure why either.
I generally take the pics in color and then convert to B$W if I want to, depends on what im shooting...
If I plan to do a bunch of pictures of my kids, then I tend to use B&W to start off with..makes better portraits...

Heh yeah I take prob 90% of my pictures of my kids... and ALWAYS take em in full color and then usually end up converting ~25% of the "keepers" to B&W for portraits (obviously keeping the color for future usage)
