It's hot. Scorching hot. Guinness World Records hot.

Researchers at New Mexico State University have discovered the world?s hottest chili pepper. It's called the Bhut Jolokia, a variety originating in Assam, India.

In tests that yield Scoville heat units (SHUs), the Bhut Jolokia reached 1 million SHUs, almost double the SHUs of former hotshot Red Savina (a type of habanero pepper), which measured a mere 577,000. The result was announced today by the American Society for Horticultural Science.

Chili is spelled "chile" by some, including Paul Bosland, director of the Chile Pepper Institute at New Mexico State?s Department of Plant and Environmental Sciences. Bosland collected seeds of Bhut Jolokia while visiting India in 2001. He grew the plants for three years to produce enough seeds to complete the field tests.

"The name Bhut Jolokia translates as 'ghost chile,'" Bosland explained. "I think it?s because the chile is so hot, you give up the ghost when you eat it!"

The intense heat concentration of Bhut Jolokia could have a significant impact on the food industry as an economical seasoning in packaged foods, he said.

ESPN's Rob Stone gives it a try

Depends. Might be too hot for a family pot of Chilli or other dish, but for a Restaurant or Mass Producer of food they're fine. Crushed up and diluted with other Spices also makes them useful.

Right. People forget that these things have flavor too. It's like adding a little water to your scotch, you take the alcohol edge off so you can taste the other flavors.

Also, if you just want heat and very little flavor added, you can use a piece of a habanero rather than 4 or 5 other peppers.

OK I'm really hungry now.

really? I use habeneros all the time in my sauces! It really isn't that bad when you have a whole vat of sauce to "dillute" it. If Bhut Jolokia has good flavor, I might trade out the habenero.

now i can handle jalepenos fresh from the garden like they are nothing.... but holy shit, that sauce had me in tears. literally CRYING...just a few drops too....

this sauce was so hot it would even irritate your skin if it got on you.

I can't even imagine taking a bit out of this new pepper. I took a bite of a habenero once and it was PURE hell.
