Was just updating myself again, I love this knife in general, pretty much about the only knife I use in the kitchen now.

I do have a few others for heavy stuff, but for general use it's my baby now, looks good too :)

That and the Ceramics Pans are holding up like brand new, I think seasoning them right of the box right might be a fail out of many trying em.

Maybe post another pick in 6 months I guess years is the test I guess, but they are doing much better than some I've had in the previous decades.

The silicone utensils I love too now that I have a bit of them, threw almost everything else that was old out nylon.

If they do come out with a smaller set of these things, I'll be buying em.

The Dalstrong inspired me to do a kitchen cutlery overhaul in my kitchen. I have a separate thread on a cheap multi-colored steel set I got here:

They cut amazingly well & are super lightweight. The Dalstrong is my go-to knife for everything already, and I use those for other stuff, like the yellow one specifically for cutting chicken cartilage off, the bread knife for bread, etc. The only thing I think the set is missing is a larger, heavier Chef's knife - I'll probably go with this 10" model for $39:

I also picked up a ceramic peeler, which I'll be trying later tonight on butternut squash. I like the ceramic so much that I'm going to try out a ceramic steak knife set next:

Like you, I've also switched over to silicone utensils for cooking. The only place I really use my metal ones now are on the grill. I'm the only one in my family who respects the whole "don't use metal utensils on nonstick pots & pans" deal, so I removed the problem altogether by only keeping the plasticy ones in the kitchen, haha. I also got a new non-stick pan, a good one this time, and it's working wonderfully. I read up on using Teflon properly, and the gist of it is: #1, never use above Medium heat, #2, only use non-metal cookware on it, and #3, do an oil rub every 10 uses or so, after cleaning. I've been doing that & the pan has been working out wonderfully...my old set is fully of chips & cracks from people using metal tools in it. I also don't really see the point of Teflon pots (as opposed to pans), since you usually use them to do stuff like boil water on High heat, which you're not supposed to do with the non-stick coating. Anyway, here's the 12" pan I got, it's been working like a champ:

Oh and as far as the Dalstrong goes, aside from not having a full set available (WANT!), my only real complaint is that there's no sheath, so you have to provide your own storage solution. At any rate, it cuts amazingly well & the light weight makes it so you don't get fatigued easily. I chopped up a couple pounds of flank steak for Mongolian beef in like a minute with it, zero effort since the blade was so sharp!

bought a ceramic wok at costco a few weeks ago and it works well. Non stick. Conducts heat very fast so I use a lower flame.

Finally had one go bad, turned the medium one up to high one night, but have a cast iron one I've always used will take over there.

Still like em but yeah can be touchy.
