Yeah, you can't go wrong with a thermapen, I really enjoy having an accurate thermometer that gives consistent and fast readings. I went through several inexpensive digital thermomters that always seemed to be out of calibration, sometimea 20-+ degrees, and took forever to get a stable reading.

It does seem to be the weapon of choice for that 🙂

It looks like that model is field calibratable so that is definitely a plus, and it is quite a bit of savings. I picked up my thermapen on a refurbished sale, but it was still around $80, so I wouldn't expect to see them much lower.

No experience with the ceramic coated pans; til now, it's simply seemed as something gimmicky to me.

QFT, and replace those cabinet doors...it's like we are living in the 80's again.

I don't know why people buy designer cookware with a crappy kitchen.
 
I tried a ceramic earlier last year, it didn't last anywhere near the span of the teflons, but when I started using it, it seemed like magic. Hand washed and only used silicon, but everything just started sticking to it even after seasoning with oil.

Bought a Calphalon to replace it, still using it.

I'd really have skipped the pans and got better cabinet doors though.

You are buying high-end stuff for low-end needs.

Silicone is the material that doesn't melt right? I've seen a lot of cheap utensils melt on the pan.

Also I hear a lot of people get meat thermometers. I've been going by feel for a long time. Is it a must have?

I have a silicone baking mat. It says heat resistant to 500°F or 260°C.

Let's see. Cooking quality, versus cabinet appearance. Why I am not surprised you'd worry about appearances first. Do you even lift?
